Long before cereal became a mainstay in most households, and certainly long before modern technological advances allowed for the pictures of athletes to be prominently displayed on that popular box of cereal claiming it was the breakfast of Champions, there was one food served to athletes at the very first Olympics. Cheesecake. That’s right in 776 B.C. At the very first Olympics held in Greece the competing athletes were served what was to become the forerunner of the cheesecake we all drool over and enjoy today.

When the Romans captured ancient Greece the making of cheesecake fell into their hands. One of the earliest recipes for this sweet treat went something like this: Take cheese and pound it until smooth as paste. Then put it into a brass sieve and add honey and spring wheat flour. Heat in one mass, cool and serve. While this particular recipe may not sound too appetizing it apparently was considered extraordinary as the Romans often used this cheesecake as an offering to their Gods.

Eventually, this recipe spread to the countries throughout Europe with various areas and people adding to and changing the recipes to suit individual tastes. It was at last brought to the United States by immigrant families. It was in the U.S. that due to an accident, cheesecake would undergo a revolutionary change.

The Accident that Revolutionized Cheesecake

In 1872, a dairyman from the state of New York by the name of William Lawrence would accidentally produce a soft white creamy cheese that had an uncommon flavor and which would later bear the name of Philadelphia cream cheese. He didn’t know it at the time, but this delectable new cheese he invented would become the main ingredient in almost all modern day cheesecake recipes, changing the taste and texture of cheesecake forever.

Since the advent of cream cheese, bakeries, caterers, and individuals have all tried to out do one another in an effort to make the most the most outstandingly delicious cheesecake. This has resulted in many incredible offerings available today.
